Toasted Marcona almond (64%), orange blossom honey (17%), sugar, egg albumin, emulsifiers (E-471 and E472c) and goat cheese. Origin: Spain.
PRODUCTION PROCESS
- toast of the peeled almond
– sugar and honey addition, according to our formula
– steaming
– egg-white addition at the end of the steaming
– whitened the mass, almonds are added, according to our formula, and everything is hand-stirred
– mass colding
– crush of the mass, by means of the stone mill, the stone refiner and the steel refiner
– mass´ homogenization
– steaming in the morters, usually called “boixets”
– last softenization in the stone mill and Turmix until reach a fluid and liquid paste.
